What are you making for Christmas dinner?

Have you even thought about Christmas dinner? Since I plan everything so ridiculously far in advance- I have! Every year because of the way our income works, I have to pre-save money in order to buy groceries during the Christmas holidays. And if I’m really lucky like this year- I have pre-bought a lot of the food we will need for our Christmas dinner, so I don’t have that as an extra expense during the holidays!
I feel like Christmas is a dinner that I don’t want to scrimp on just because the budget gets tight. Now that doesn’t mean that I don’t buy store brand stuff….that just means that I don’t want pizza or mac & cheese for our Christmas dinner!! 🙂
SOOOO in our house, we have all the necessary ingredients for our ham dinner, green bean casserole, shrimp, and once I hit up the Publix sale this week I will also have the yummiest yeast rolls & our pie! It’s a little hard for us to make a superb comfort food dinner on Christmas because of my kids allergies! SO I’ve decided this year that I am just going to make all the yummy foods for my hubby & I, and just have a separate option for the kids on the side. We need to splurge too!
Whats on the menu at your house?
We will be in a hotel starting our move for Christmas…BUT when we get to family a few days later…I want to make a Prime Rib dinner. Mmmmmm! Potatoes (mashed with Rance dressing in it) and Carmelized carrots (basically butter and brown sugar….)
